Born and raised in the bayous of southern Louisiana, Jean-Paul Bourgeois built his culinary identity long before television cameras arrived. From working at local seafood shacks to studying at the John Folse Culinary Institute, his path has always been rooted in the traditions, flavors, and people of Louisiana. Those humble beginnings eventually led him through kitchens across the country, refining his craft while remaining deeply connected to the culture that first inspired him.

Today, Jean-Paul is known as a chef, television personality, outdoorsman, and storyteller whose work celebrates food, family, and life in the American South. Whether hosting outdoor cooking adventures, creating food media, or competing on Food Network's Chopped Castaways, he brings the same authentic approach that has defined his career from the beginning. The Micah collaboration reflects that spirit—drawing inspiration from faith, perseverance, and the belief that meaningful things are built through dedication, craftsmanship, and time.

Founded in 2006 after Hurricane Katrina, Edible Schoolyard New Orleans (ESYNOLA) is a signature program of FirstLine Schools, serving four open-enrollment public schools in New Orleans. Its mission is to teach children to make healthy connections through food and the natural world.

 

Each year, ESYNOLA reaches approximately 2,900 Pre-K–8th grade students through hands-on garden and culinary classes, along with food education events for students and families.
